How to make an automatic hood? - It's not at all as difficult as it might seem. There are very different options, but I settled on something like a thermal relay. It will work like this: when someone cooks something on a gas or electric stove, then naturally heat will emanate from the fire and from the food and rise upward. The hood will heat up and, accordingly, the thermostat sensor will heat up, which in turn will turn on the hood.

I settled on a simple circuit with 2 transistors, using a Schmitt trigger as an example.

thermal relay circuit

I assembled it using a homemade method.

There are also rectifier diodes and a capacitor on the board. The thermistor was taken from a broken air conditioner.
I connect it to the hood. The hood is 3-speed, I connect it to a single-speed gap.

disassemble the hood

Assembled and brought out the wires for the relay.

connect

Connected to the circuit.

connect the thermostat to the hood

I supplied power to the circuit and adjusted everything. Next I insulated it and installed it in place.

isolate and install

I made a small hole in the grill for the sensor. It is barely visible in the photo.

Everything works without problems. And in addition there is a video about the thermostat.

    This is a regular relay.

I'm a noob in electronics, but I want to assemble a thermostat. Could you post a drawing of the circuit board? I also heard that simple circuits are susceptible to chattering at temperatures close to the set one. Please describe how your scheme copes with this?

There will be no chatter here, since the sensor has a large inertia.
